This is a throw it all in crockpot recipe you won't regret!
1 cup tri-color quinoa 2 cups broth of choice (vegetable or chicken) 1 can of diced tomatoes 1 can of black beans 1 can of chili beans 1 can of corn 3 jalapeños diced 1/2 onion; chopped 1 pepper (green, red, or both) *Optional: roasted red pepper flakes (Again, I love spice!)
Turn crockpot on high. Pour broth and quinoa in crockpot. Chop and dice vegetables and place in the crockpot. Cook for 4 hours, stirring occasionally and viola!
